Garlic Parmesan Baked Halibut

Ingredients

Topping:

1/4 cup grass fed butter, softened

1/4 cup Healthy Mayonnaise (see notes below)

1/2 cup freshly grated Parmesan cheese

2 Tbsp finely chopped green onion

4-6 garlic cloves, crushed

Dash of Tabasco


Salt and Pepper

1/2 lemon, juiced

4 halibut filets (1" thick)

Directions

1. Preheat oven to 450. Season halibut with salt, pepper and a squeeze of lemon juice. Place filets in a baking dish. Bake for 6 minutes.

2. Mix all topping ingredients together. Remove halibut from oven and spread Parmesan mixture over top and sides of fish. Turn oven to broil and cook 2-3 minutes, until the tops are lightly browned. Serve immediately with rice and veggies.

Notes

I used Sir Kensington's Mayonnaise purchased at whole foods. It's NON GMO and Gluten-Free and is made with Free Range Eggs.

The Halibut was from Costo. Frozen Wild Alaskan.

First time using this recipe and loved it so much I had to place it here for you to try! 

Instead of rice, I used a package of Quinoa & Kale w/garlic, olive oil and sea salt. All Organic by Path of Life and available at Costco in the Frozen Food section. It comes in a package that includes 5-10 oz. bags that steam perfectly in the micro wave for 3 1/2 minutes.
