Break the woody ends off asparagus ends.
10 oz asparagus
2 T. melted grass fed butter (I like Kerrygold)
3 cloves garlic, minced
Salt, to taste
Ground black pepper to taste
lemon juice, optional
Heat skillet on med. heat and add the melted butter. Sauté the garlic until slightly browned before adding the asparagus. Toss with a spatula to combine well with the garlic.
Add salt and pepper, to taste. Add a squeeze or two of lemon juice, if using. Once the asparagus becomes tender and just cooked, remove from and serve immediately.
If you want to save calories you can sauté in olive oil. If you want to maintain the butter flavor use butter flavored olive from "Heavenly Oils", "Olive Tree" or other specialty olive oil and vinegar shops.
This easy and quick Buttered Garlic Asparagus is pictured with Garlic Parmesan Baked Halibut and placed on a bed of Quinoa with Kale, Olive Oil and Sea Salt. You can find the recipe for the Baked Halibut in the "Fish" category of my recipe section. The Quinoa I purchased at Costco in the Frozen Food section is totally organic and comes with 5 individual 10 oz packages that can be steamed in the Micro-Wave for 3 1/2 minutes. Or you can just steam some brown or wild rice.
